On September 10 between 01:15 PM and 02:00 PM during the IFSA Global EXPO at the Gaylord Texan Resort and Convention Center, Aeromexico will take part in a Chef Demo, during which it will present highlights from its most recent and upcoming menus.
An Exciting Culinary Partnership
The presentation will be expertly led by Adriana Noriega, co-owner and culinary director of Les Croissants, one of the most prestigious catering companies in Mexico City. She joined Aeromexico as Chef Consultant in 2024 before redesigning the full Premier menu for short- and medium-haul business passengers as well as the Premier One menu for long-haul business class passengers flying out of Mexico City. The latter’s inflight food and beverage offering is presented on new servicewear designed by NewTerritory and rolled out earlier this year.
Les Croissants, Chef Adriana’s catering company, is now also operating Aeromexico’s new Salones Premier lounges at México City International Airport (MEX), which reopened in May 2026, and the airline confirmed it is now also working with Chef Adriana on redesigning the menus for services across Europe and Asia. It will refresh the MEX inflight menus for 2027.
The Best Mexico Has to Offer
During the Chef Demo at IFSA Global EXPO, Chef Adriana will prepare one of Aeromexico’s signature dishes: Shrimps with Tequila Sauce. Inspired by the southeast region of México, it combines the flavor of shrimps with the sweetness of plantain and freshness of cilantro. It is finished with a tamarind and tequila sauce, adding a sour sweet touch.
The meal is currently available for pre-selection to Premier One passengers flying long-haul from MEX to Asia and Europe; and on medium-haul flights from MEX to John F. Kennedy International Airport and Los Angeles International Airport in the US. It can be served for lunch or dinner.
The second dish being presented is “Chiles en Nogade,” which originated in Puebla in the center of Mexico. The seasonal option, served in September, commemorates the Mexican Independence Day and is plated to resemble the Mexican flag.
Its ingredients include a Poblano pepper filled with a stew of ground beef covered in Nogada Sauce made from creamy “Castilla,” or walnuts, and a dressing of pomegranate and coriander.
This dish is also available for pre-selection to Premier One passengers flying from MEX to North America, Asia and Europe, but only throughout September.
The final dish being highlighted by Chef Adriana is still under development. It centers around Cajeta, a dessert that hails from Celaya in the center of Mexico. A form of dulce de leche traditionally made with goat’s milk, it is being presented on behalf of Aeromexico combined with banana and crunchy hazelnuts to round off the demonstration with a memorable sweet treat.
A Time for Reinvention
Aeromexico is flourishing as a result of its partnership with Noriega. The carrier posits that Chef Adriana’s menus are the reason its Net Promoter Scores reached a historic high at the end of 2025.
And the developments don’t stop there. As part of its wider investment in its inflight service offerings, this year Aeromexico also launched its exclusive new “Tequila Spritz” drink after several months of development. The cocktail consists of Tequila, sparkling wine and lime to offer passengers flying long-haul in Premier One a unique welcome drink with a fresh, floral bouquet.
