The IFSA World Food Safety Guidelines (WFSG) evolved through collaboration between the airline catering industry and federal regulatory agencies with major roles in establishing safe operating standards for the catering, preparation and consumption of food, beverages and water provided onboard airlines.
IFSA is proud to introduce the World Food Safety Guidelines for Airline Catering 2026 (Version 6), the latest evolution of this important industry resource. Developed through the collaborative efforts of IFSA’s Government Affairs and Education Committee (GAEC), the updated guidelines build on the 2022 edition to help airline caterers enhance their existing food safety programs and support the continued evolution and maturity of Food Safety Management Systems (FSMS).
WFSG 2026 defines minimum, fundamental requirements for airline caterers and incorporates key requirements from internationally recognized food safety standards, including ISO 22000:2018, ISO/TS 22002-1:2025, ISO/TS 22002-100:2025 and FSSC 22000 Version 7. The updated resource also includes procedures and form templates that organizations can adapt to support their own food safety programs.
