Now that our New Year’s resolutions to eat less have been forgotten we can explore the food trends we have to look forward to in 2015. From what we can see so far, food trends in 2015 are going to be diverse. From re-visiting traditional, regional recipes to building upon recently created culinary delights our taste buds are sure to be tempted in-flight this year.
All Nippon Airways is taking a leap into traditional Japanese fare with their new 2015 menu designed by the chefs of Copenhagen’s Noma. The menu is titled “Inspiration of Japan,” celebrating local cuisine, culture and tradition from cities and towns across the country. The menu was debuted on the ground earlier this month at Noma’s exclusive Tokyo Pop-Up Restaurant.
On the ground, rumour has it “Toast is a flavor” in 2015. According to the experts at the Winter Fancy Food Show in San Francisco toast has been making a comeback as a celebrated comfort food and now it’s a flavor, popping up in teas and chocolate bars, as well as with bread itself. Passengers recently took notice of American Airlines’ eggless French toast breakfast. The French toast strata dish made jaunted.com’s Amazing Airline Meals list.
Last year Saveur, a popular culinary magazine, rated the top airline meals for 2014 in first, business and economy classes. Many of the top dishes set the bar high for 2015 with locally and seasonally inspired plates, a trend that appears to be continuing into 2015.
Time magazine believes healthy fats are in for 2015, along with insects and a grain called millet. We’re curious to see if their top 6 list finds success in-flight this year! As airlines continue to study the art and science of in-flight culinary delights, we will no doubt have more tastes and trends to share throughout 2015.
